Everyone loves chocolate chip cookies. You’re lying if you say you don’t. I mean who could blame you? After all, they’re fluffy, warm, smell so good and are covered with melting chocolate chips. It is the most perfect comfort food.
I guess if you had anything bad to say about chocolate chip cookies, it would be that they’re pretty bad for you. They’re pure sugar and snacking on too many of them is unhealthy. I’m not telling you to stop having them, but maybe you can find alternatives to chocolate chip cookies that are healthier. Lucky for you, I have a recipe that makes 12 Vegan Chocolate Chip Cookies. Aside from them being healthier than the average cookie, they’re really easy to bake and you most likely already have the ingredients.
Ingredients:
3/4 Cups of Whole Wheat Flour
1/2 cup rolled oats
1/4 tbs of salt
1 tbs coconut oil
1 ripe banana (mashed up)
1/4 cup brown sugar
1 tbs vanilla extract
1/3 cup vegan chocolate chips
Directions:
1. Preheat your oven to 350 degrees Fahrenheit.
2. Mix the rolled oats, flour, baking powder, sugar, chocolate chips, and salt in a bowl. In a seperate bowl, whisk together all the liquid ingredients: coconut oil,banana, and vanilla.
3. Add the wet ingredients into the dry ones. Make sure you use a wooden spoon to mix the ingredients together, whatever you do don’t use your hands it is really messy.
4. Once your mix is thick, grab an oven safe tray and put parchment paper on it so that when the cookies are done, they won’t get stuck to the tray. If you don’t have parchment paper which I didn’t, spray some coconut oil on the tray, it works jut as well.
5. Either scoop out some dough with your hands to make balls, or use a spoon. I found using my hands was easier so I did that. You can make the balls bigger or smaller depending on how you want your cookies, so have fun with it. Once they’re shaped, flatten them just a bit and put them on the tray.
6. Once you’ve used up all the dough, put them in your preheated oven for about 12 minutes. When the edges start to get golden brown, they’re done!
7. Wait a few minutes before you take them off the tray because if you try to while they’re still hot, they will crumble.
